Zucchini Fritters

2 medium zucchinis, grated
1/2 tsp salt
1 egg
1/3 cup flour
1/4 cup grated Parmesan
2 tosp chopped fresh herbs (parsley, dill, or mint)
Pepper to taste
Olive oil for frying
Instructions
1. Grate zucchini and toss with salt. Let sit 10 minutes, then squeeze out moisture.
2. Mix with egg, flour, cheese, herbs, and pepper.
3. Pan-fry in olive oil 2-3 minutes per side, until golden.
