Crispy Halloumi W/ Tomatoes And White Beans

Olive oil

1 pound cherry tomatoes, halved

2+ garlic cloves, pressed

1 tablespoon finely chopped parsley, plus more for serving

1 teaspoon honey, plus more for serving

1 teaspoon dried oregano and thyme

Salt and black pepper

1 -2 (15-ounce) can white beans, drained

1(8-ounce) block halloumi, cut into ¼-inch-thick slices

½ lemon

Instructions

In a large oven proof pan over medium heat, add olive oil, spices, garlic, tomatoes, and parsley, and cook, stirring, until the tomatoes soften and release their juices (about 10 minutes). Stir in the beans and heat 3 minutes, then turn off the heat, arrange halloumi slices on top, and broil until the cheese is golden and crispy (about 5 minutes). Drizzle with olive oil, squeeze lemon over the top, add a light honey drizzle, garnish with parsley, and serve immediately with bread
