1 garlic clove or 1/2 shallot, minced

1/3 c. extra-virgin olive oil

3 tbsp. red wine vinegar

2 tsp. Dijon mustard

Kosher salt

Freshly ground black pepper

5 oz. fresh spinach

1 apple, such as Honeycrisp, thinly sliced

1/4 red onion, thinly sliced

1/3 c. crumbled feta

1/4 c. sliced almonds, toasted

Instructions

Dressing

In a medium bowl, whisk garlic, oil, vinegar, and mustard until emulsified; season with salt and pepper.

Make Ahead: Dressing can be made 5 days ahead. Transfer to an airtight container and refrigerate.
