Batter Fried Vegetables

Ingrédients

3/4 cups cornstarch

1/4 cup flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup of water

1 egg, slightly beaten

Instructions

In a bowl, stir the first five ingredients. Add water and egg and stir until smooth.

Pour 1 quart of corn oil into a large skillet to 1/2 inch depth. Heat oil to 375°. Dip 4 cups, cut up vegetables, zucchini, carrots, onions, or mushrooms and carefully add vegetables a few at a time. May also add cube chicken pieces with skin removed. Turn once to the other side. Drain on paper towels. May add 1 teaspoon of dried basil leaves and one chopped garlic clove.
