Ingrédients

This is Thai dipping sauce it’s amazing with steak in fact the full dish is known as crying tiger steak which I will demonstrate the full version of at some point too.

2 tbsp sticky Thai rice

1 sliced shallot

3 spring onions (greens only)

Small handful of coriander/cilantro

1 tbsp chilli flakes

4 tbsp fish sauce

1 tbsp tamarind paste

1 tbsp light brown sugar (should be palm sugar really)

Juice of 2 limes

Instructions

Toast the rice in a dry pan over a low/medium heat until golden brown then grind to a rough powder

Chop the shallot, spring onion, coriander add those to a bowl with rice powder and the remaining ingredients

Allow to sit for 30 mins before serving
