Cajun Chicken Pasta

260g chicken breast raw
1 tsp Cajun seasoning & garlic salt
120g dried pasta
1 tbsp tomato purée
1 tsp garlic
200ml veg stock
40g low fat cream cheese
10g Parmesan

Instructions
Dice the chicken breast & coat in Cajun seasoning & garlic salt
Boil the pasta until soft then drain
Fry in a pan until brown then add the garlic, tomato purée, veg stock, cream cheese, salt, pepper and simmer over a low heat until a creamy sauce forms
Add in the drained pasta, Parmesan and stir over a low heat until creamy
Divide into 2 portions & serve
This recipe could be easily meal prepped for the week! It will last up to 3 days in the fridge.
