Curried Sausages

Ingrédients

500g Aldi plain beef sausages

1 T vinegar

1 small onion, finely chopped

1 carrot, sliced

½ c frozen peas

½ T Keen’s curry powder

2 c water

2 crumbled beef salt reduced stock cubes (Aldi) or 1 t Vegeta

½-1 t mixed herbs

2 t tomato ketchup

Instructions

Place sausages in saucepan and cover with water.

Add vinegar.

Cover.

Bring to boil, then reduce to simmer for 10 mins.

Drain.

Remove skins and slice thickly.

Melt a knob of butter in saucepan.

Saute onion for 5 mins.

Add curry and herbs.

Add water and crumbled stock cubes.

Reduce heat.

Add sliced sausages and carrots.

Add tomato sauce to taste.

Stir and mix.

Simmer 10 mins with lid on.

Add frozen peas and simmer 10 mins more.

Thicken with cornflour blended with some water.

Add and stir to thicken
