Tikka Masala Chicken and Cauliflower

Ingrédients

One 12.5-ounce jar tikka masala simmer sauce

1 pound chicken thighs

1 pound fresh or frozen cauliflower florets

8 ounces naan bread

Sliced cucumbers, plain

Greek yogurt, and/or sour cream for topping (optional)

Instructions

1. In a wide skillet over medium heat, warm the sauce. Add the chicken, spreading each thigh out flat, and top with the cauliflower. Cover and cook for 10 minutes.

2. Turn the chicken and stir gently to coat the cauliflower with the sauce. Re-cover and cook for 4 minutes more, or until the chicken is cooked through.

3. Place the naan on a microwave-safe plate and microwave on full power for 30 seconds to warm.

4. Serve the chicken and cauliflower with the naan on the side and your choice of toppings.

Notes

NOTES

• I like to use frozen cauliflower because it's convenient, but fresh works just about the same.

• Use chicken tenders instead of chicken thighs.

• If this is a new food for the kids, start with a very small portion and show them how to dip their bread into the sauce. Kids like to model what grown-ups do at the table... at least, sometimes!
