Ingrédients

1 red bell pepper

1/2 onion

1 jalapeño

1/4 cup salsa

Taco seasoning mix

1 lb ground beef

1 1/2 cups beef broth

1 cup rice

Cheese for the top

Instructions

  1. Heat olive oil in a skillet over medium heat

  2. Chop pepper, onion, and jalapeño, add to skillet and cook until slightly tender

  3. Add ground beef to same skillet and cook through

  4. Add salsa, broth, and taco seasoning. Bring to a boil.

  5. Add rice and simmer for 15-20 minutes until liquid is absorbed.

  6. Remove from heat and sprinkle cheese on top. Put the lid on and let cheese melt for a few minutes.
