Pineapple Cucumber Salad – Sweet, Tangy & Super Refreshing

Ingrédients

2 cups fresh pineapple (diced)

1 large cucumber (diced, peeled if preferred)

½ small red onion (thinly sliced)

¼ cup fresh cilantro or mint (chopped)

1 small jalapeño (finely diced, optional)

Juice of 1 lime

1 tbsp honey (or maple syrup for vegan option)

½ tsp salt

¼ tsp black pepper

Instructions

In a large bowl, combine pineapple, cucumber, red onion, and herbs.

Add jalapeño if using, for a little spicy kick.

In a small bowl, whisk together lime juice, honey (or maple), salt, and pepper.

Pour the dressing over the salad and toss gently to combine.

Chill for 15–30 minutes for best flavor—or serve immediately!
