Sloppy Joe Potato Skillet

1 lb ground beef
2 cups potatoes, diced small
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup sloppy joe sauce (store-bought or homemade)
1/2 cup beef broth
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded cheddar cheese
2 tbsp chopped parsley (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced potatoes and cook for 10–12 minutes until tender and lightly browned.
Add ground beef and cook until browned. Drain excess grease if needed.
Add onion and cook for 3–4 minutes until softened, then stir in garlic.
Stir in sloppy joe sauce, beef broth, garlic powder, paprika, salt, and pepper.
Simmer for 5–7 minutes until everything is well combined and heated through.
Sprinkle cheddar cheese over the top and let it melt.
Garnish with parsley and serve hot.
