5 Minute Extra Fluffy Pancakes

Ingrédients

1/4 cup canola oil

2 eggs

1 teaspoon vanilla

1 cup milk (I used 2%)

1 1/2 cups all purpose flour

2 TB sugar

1/2 TB baking powder

1/4 teaspoon salt

Instructions

Heat your griddle to 350° and spray with cooking spray

In a large bowl, whisk together the oil, eggs, vanilla, and milk until well mixed

Fold in the flour, sugar, baking powder, and salt. It will be slightly clumpy at first, you don't want to over mix, but its okay to flatten out some of the clumps with a rubber spatula.

Using a 1/4 cup dry measuring cup, pour the batter onto the heated griddle. ( allow to cook and begin to rise for a minute before you sprinkle on any chocolate chips or fruit here)

Cook until they begin to bubble, then flip and cook 1-2 minutes more. Drizzle with syrup and enjoy!
