Sheet Pan Maple Glazed Chicken

Ingrédients

4 large or 8 small bone-in/skin-on chicken thighs

1.3 pounds sweet potatoes (about 2 large ones, cut into thick half-moons)

1 large green bell pepper (cut into large pieces)

2 red onions (cut into wedges)

4 tbsp olive oil

1 tbsp salted butter (melted)

4 garlic cloves (pressed)

1 tsp salt

1 tsp black pepper

1 tsp dried rosemary

1 tbsp Cajun seasoning

chopped parsley (for serving, optional)

3 tbsp maple syrup

1 tbsp low sodium soy sauce

2 tbsp whole grain mustard

2 tbsp lemon juice

Instructions

Preheat the oven to 350°F/180°C with the baking rack in the middle. Line a baking sheet with parchment paper.

Get your prep done before you start cooking. Wash and cut the sweet potatoes in half lengthwise, Cut each half into half-moons. You can also use a peeler to remove the skin, but this is not necessary. Deseed and cut the bell pepper into large pieces. Peel and cut the red onions into wedges.

Combine the olive oil with melted butter, salt, pepper, Cajun seasoning, rosemary and pressed garlic.

Place the chopped vegetables on the prepared baking sheet, add chicken and pour over the prepared oil mixture. Toss with your hands to evenly coat vegetables and chicken with the mixture. Nestle the chicken in between the vegetables skin-side down.

Transfer to the oven and bake, uncovered, for 40 minutes.

In the meantime, combine the maple syrup with mustard and soy sauce.

Remove chicken from the oven. Increase the heat to 400°F/200°C.

Turn the thighs skin-side up and spoon the prepared maple glaze over the chicken. Then sprinkle with lemon juice. Return the baking sheet to the oven and bake, uncovered, for 20 minutes more or until the skin of your chicken is crispy and golden brown.

Sprinkle with chopped parsley and serve with your favorite sides. Enjoy!
