Chicken Pot Pie

2 chicken breast halves
1/4 c. butter
1/2 c. chopped onion
1/2 c. chopped gr. pepper
1/2 c. chopped red pepper
1/4 c. flour
1 t. salt
1/2 t. dried oregano
2 c. milk
1/2 c. chicken broth
1/4 t. black pepper
1/2 c. cornmeal
1/2 c. flour
1 1/2 t. baking powder
1/2 t. salt
1 egg
2/3 c. milk
3 T. butter melted
4 oz. shredded jack cheese
Instructions
Simmer chicken breasts in water 10-18 min. Cube chicken set aside. Sauté onion, peppers, & butter till soft. Stir in flour, cook 1 min. Add salt, oregano, pepper, milk and broth slowly while stirring. Cook until mixture is thickened. Add chicken & pour into round baking dish. Combine cornmeal, flour, baking powder, & salt in bowl. Beat in the egg, milk, & butter. Stir in cheese. Pour over chicken mixture. Sprinkle with paprika. Bake at 400-420 for about 20 min. or until crust is golden brown.
