Christmas Oreo Banana Bread

Batter:
½ cup (113g) unsalted butter, melted & slightly cooled
¾ cup (150g) brown sugar, packed
2 large eggs, room temp
1 ½ tsp vanilla extract
3 overripe bananas, mashed
¼ cup (60g) sour cream, room temp
1 ½ cups (190g) all-purpose flour
½ tsp cornstarch
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
1 cup chopped Christmas Oreos (~8 oreos) + more for topping
Glaze:
½ cup (60g) powdered sugar
2-3 tsp milk (adjust for desired consistency)
Splash of vanilla
Optional: christmas sprinkles and more chopped oreos for topping
Instructions
Preheat oven to 350°F (175°C) and line a loaf pan with parchment.
Whisk together melted butter and brown sugar.
Add eggs, vanilla, mashed bananas, and sour cream and mix until smooth.
Whisk dry ingredients in a separate bowl: flour, cornstarch, baking soda, salt, and cinnamon.
Fold dry ingredients into the wet until just combined. Don’t over mix.
Fold in the chopped oreos gently.
Spread batter into the loaf pan and press some more chopped oreos on top.
Bake 50-60 minutes or until a toothpick inserted comes out clean/with a few moist crumbs. Tent with foil in the last 10-15 minutes if the top is browning too much.
Let cool completely.
Whisk glaze ingredients and drizzle over the cooled loaf. Top with christmas sprinkles and more chopped oreos.
