Crispy Chickpea and Roasted Harissa Cauliflower Tahini Salad

Ingrédients

  • 1 large cauliflower

  • 1 tin of chickpeas

  • 1 tsp paprika

  • 2 tsp zaatar

  • harissa paste (enough to coat cauliflower)

  • olive oil

  • salt

  • pepper

  • 5 garlic cloves

Tahini dressing:

  • 1tbsp tahini

  • 2tbsp yogurt or crème fraiche

  • 1 tbsp lemon juice

  • 1 tbsp honey

  • 1 tsp zaatar

  • salt

  • pepper

Instructions

  1. Roast washed, dried chickpea with olive oil, tsp paprika, 2 tsp zaatar at 200c for 20 mins

  2. Roast cauliflower with harrisa paste, tsp paprika, olive oil, salt and pepper, 5 Smashed garkic cloves at 200c for 15 mins

  3. Dressing is tbsp tahini, 2 tbsp yog/creme fraiche, tbsp lemon, tsbp honey, tsp zaatar salt and pepper
