Sudado De Pollo (Colombian chicken stew) * Pressure Cooked

4 large Russet or Yukon Gold potatoes, peeled and roughly chopped in 1-2” chunks
1 large onion, 1/4-inch julienned (~1 1/2 cups)
4 large tomatoes, cut into 1-2” chunks (~3 cups)
1 whole chicken, back removed, cut into 8 pieces (about 4 pounds), OR 4 whole chicken legs, cut into thighs and drumsticks OR 8 bone-in thighs with skin
3 bay leaves
Kosher salt (add very generously) and freshly ground black pepper
Cumin
Garlic, minced
Parsley
paprika, 1 tbsp
Optional additions (pick your adventure):
1/2 red pepper, 1-2” chunks
dried Herbs to taste
chili
2 Carrots, rough chop 1.5” pieces
zucchini, large pieces
lentils
bacon
cilantro
Instructions
(optional): sear chicken pieces until brown
Add all ingredients to pressure cooker. Toss with hands to combine.
Seal lid and cook under high pressure for 20 min + 5 min gradual pressure release.
Season to taste
