Greek Lemon Potatoes

1 c chicken stock
1/4 c olive oil
8 cloves garlic, finely chopped
1 1/2 t dried oregano
1 t salt
2 lemons
4-5 medium Yukon gold potatoes
Chopped parsley for garnish
Instructions
Heat oven to 400 degrees.
Mix chicken stock, olive oil, juice from 1 lemon, salt, garlic and oregano in 9x9 glass baking dish.
Peal and cut potatoes into wedges.
Place potatoes in dish with the liquids.
Bake for 60 min. Flip and finish roasting until golden brown.
Plate and squeeze lemon and sprinkle parsley over top.
