Farro and Arugula - Use What You Have

2 cups Farro
Arugula
Lemon juice (half a lemon)
olive oil
roasted carrots or other root vegetables (roast with olive oil, salt and pepper for 20 mins at 425)
toasted almonds or pistachios
fresh mozzarella or feta or goat cheese
fresh herbs - basil, mint
Dates (or dried cranberries)
Instructions
Make farro according to package instructions
Roast root vegetables at 425 with olive oil, salt and pepper
Mix lemon juice and olive oil and add to combination of farro and arugula
Chop other ingredients and assemble
