2-6 cups peach scraps (skins, pits, any leftover flesh/juice)
Water (enough to cover scraps)
Granulated sugar (double the amount of strained liquid)
Instructions
Gather your peach scraps and toss them into a pot. Cover them with water like a warm blanket.
Bring that pot to a lively boil, then reduce the heat and let it simmer down for about 45 minutes, allowing those flavors to meld.
Once your kitchen is filled with that delightful peach aroma, remove the pot from the heat and let the mixture steep for a bit longer.
Strain the mixture through a fine mesh sieve, separating the golden liquid from the solids like a true kitchen magician.
Measure the strained liquid and then scoop out double that amount in sugar – we’re making this syrup sweet!
Pop the mixture back into the pot and bring it to a boil again. Stir until all that sugar has happily dissolved into the peachy goodness.
Remove from heat and carefully pour the syrup into sterilized jars, sealing in all that deliciousness.
