Shrimp Corn Salsa Bowl

Ingrédients

Bowl Ingredients:

  • 6oz peeled & deveined raw shrimp

  • 2 tsp salt

  • 1 tsp cajun seasoning

  • 2 tsp black pepper

  • 1 tsp cayenne pepper

  • 2 tsp paprika

  • 2 tsp garlic powder

  • 1/4 avocado (optional)

  • 1/2 cucumber

  • 3/4 cup cooked white rice

  • spray oil

  • 1 romaine lettuce

Corn Salsa:

  • 2/3 cup cooked golden sweet canned corn

  • 1/2 cup red onion

  • 1/4 cup cilantro

  • 1/2 cup poblano pepper

  • juice from a lime

  • 1 tsp salt & black pepper or to taste

Sauce:

  • 1/2 cup light sour cream

  • juice from a lime

  • salt to taste

  • 2 tsp minced garlic

  • 1/2 cup of cilantro

Instructions

  1. Place your raw shrimp into a bowl and add in salt, Cajun seasoning, black pepper, cayenne pepper, paprika, and garlic powder.

  2. Grill your shrimp in a pan coated with a light spray of spray oil until golden brown

  3. To make your salsa add your cooked canned corn, diced red onions, cilantro, diced poblano peppers, juice of a lime, and salt and pepper to taste.

  4. To make your sauce in a cup add your light sour cream, juice of a lime salt to taste, minced garlic, and cilantro. Blend it all together using a food processor to make your sauce.

  5. Over a bed of your favorite rice, add chopped lettuce, your corn salsa, your cooked shrimp, and a drizzle of the sauce and enjoy!
