Shrimp Corn Salsa Bowl

Bowl Ingredients:
6oz peeled & deveined raw shrimp
2 tsp salt
1 tsp cajun seasoning
2 tsp black pepper
1 tsp cayenne pepper
2 tsp paprika
2 tsp garlic powder
1/4 avocado (optional)
1/2 cucumber
3/4 cup cooked white rice
spray oil
1 romaine lettuce
Corn Salsa:
2/3 cup cooked golden sweet canned corn
1/2 cup red onion
1/4 cup cilantro
1/2 cup poblano pepper
juice from a lime
1 tsp salt & black pepper or to taste
Sauce:
1/2 cup light sour cream
juice from a lime
salt to taste
2 tsp minced garlic
1/2 cup of cilantro
Instructions
Place your raw shrimp into a bowl and add in salt, Cajun seasoning, black pepper, cayenne pepper, paprika, and garlic powder.
Grill your shrimp in a pan coated with a light spray of spray oil until golden brown
To make your salsa add your cooked canned corn, diced red onions, cilantro, diced poblano peppers, juice of a lime, and salt and pepper to taste.
To make your sauce in a cup add your light sour cream, juice of a lime salt to taste, minced garlic, and cilantro. Blend it all together using a food processor to make your sauce.
Over a bed of your favorite rice, add chopped lettuce, your corn salsa, your cooked shrimp, and a drizzle of the sauce and enjoy!
