ASPARAGUS & SALMON PASTA SALAD

Ingrédients

375g spiral pasta

330g jar asparagus in spring water,

drained, cut into 5cm lengths

415g can red salmon, drained, flaked

100g watercress, trimmed

3 spring onions (75g), sliced thinly

WHOLEGRAIN MUSTARD VINAIGRETTE

1 garlic clove, crushed

2 tablespoons wholegrain mustard

2 tablespoons red wine vinegar

2 tablespoons lemon juice

60ml (¼ cup) olive oil

Instructions

1 Cook pasta in a large saucepan of boiling water for10 minutes or until just tender; drain. Rinse under cold water; drain.

2 Make wholegrain mustard vinaigrette.

3 Combine pasta and asparagus in a large bowl with salmon, watercress and onion. Drizzle dressing over pasta; toss gently to combine.

WHOLEGRAIN MUSTARD VINAIGRETTE

Place all ingredients in a screw-top jar; shake well.
