4–5 tbsp warm water
Pinch of sea salt
Creamy Coconut Yogurt Layer:
150g coconut yogurt (probiotic-rich)
½ tsp vanilla extract
1 tsp maple syrup or honey (optional)
Healthy Crunchy Topping (Dubai bar inspiration):
Crushed pistachios, walnuts, or almonds (healthy fats, protein)
Toasted coconut flakes or cacao nibs (extra texture)
Instructions
Prepare Chocolate Chia Layer:
In a bowl, whisk together chia seeds, cacao powder, almond/coconut milk, maple syrup, and vanilla.
Refrigerate for at least 30 minutes or until thickened (overnight is ideal).
Prepare Caramel Date Layer:
Blend dates, almond butter, warm water, and sea salt until smooth and creamy.
Prepare Coconut Yogurt Layer:
Stir together coconut yogurt, vanilla extract, and optional maple syrup/honey.
Assemble Layers:
Spoon chocolate chia pudding into glass jars or serving bowls.
Add a layer of date caramel, then a dollop of coconut yogurt.
Repeat layers if desired.
Finish with Crunchy Toppings:
Sprinkle generously with pistachios, toasted coconut flakes, or cacao nibs.
