Sausage Green Bean Potato Casserole

Ingrédients

14 oz smoked sausage, sliced into rounds

1½ lbs potatoes, diced into bite-size pieces

2 cups green beans (fresh, frozen, or canned drained)

1 tbsp olive oil

1 small onion, diced

1 (10.5 oz) can cream of mushroom or cream of chicken soup

½ cup milk

1 cup shredded cheddar cheese

½ tsp salt

½ tsp black pepper

½ tsp paprika

½ tsp onion powder

1 tbsp chopped parsley (optional)

Instructions

Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

In a skillet over medium heat, cook sliced sausage 4–5 minutes until lightly browned.

Add diced onion and cook 3–4 minutes until softened.

In a large bowl, whisk cream soup, milk, salt, pepper, paprika, and onion powder until smooth.

Add potatoes, green beans, and sausage mixture to the bowl and stir to coat evenly.

Transfer everything into the baking dish and spread evenly.

Cover with foil and bake 40 minutes until potatoes are tender.

Remove foil, sprinkle cheddar cheese over the top, and bake 10–15 minutes until melted and bubbly.

Let rest 5 minutes, garnish with parsley, and serve warm.
