Pork Skillet with Zucchini & Herbs

1 lb pork stew meat (cubed)
2 medium zucchinis, sliced into half-moons
1 red bell pepper, chopped
2 tbsp olive oil
1 tsp Italian seasoning or smoked paprika
1/4 tsp salt (or to taste)
Fresh basil or parsley (optional, for garnish)
Instructions
Sear the pork:
Heat garlic-infused oil in a large skillet over medium-high heat. Add pork and sear until browned on all sides, about 6–8 minutes.
Add veggies:
Reduce heat to medium. Add zucchini and red bell pepper. Stir and cook for another 6–8 minutes, until veggies are tender but not mushy.
Season:
Sprinkle with Italian seasoning or paprika, and salt to taste. Stir to coat everything evenly.
Finish and serve:
Remove from heat and garnish with chopped basil or parsley if desired. Serve as-is or over a bed of rice or quinoa.
