Chicken Fajita Pasta

3 cups Penne pasta
2 tablespoons Olive oil
1 medium Onion (diced)
3 large Bell pepper
1 tablespoons Minced garlic
2 pounds Chicken breast (boneless and skinless)
1 oz Fajita seasoning
1/2 cup Heavy cream
20 oz Ro-tel diced tomatoes and green chilies
1 cup Monterey jack cheese (shredded)
Instructions
Cook pasta according to package directions and set aside.
Heat 1 tbsp olive oil in a large pan. Add diced veggies and cook for 1-2 minutes. Add in minced garlic.
Cut chicken into small cubes and place in the pan with veggies. Season with fajita seasoning.
Add the cooked and drained pasta into pan with chicken and veggies along with Ro-tel and heavy cream. Mix these ingredients well. Add in shredded cheese and mix until melted and well combined.
