Tomato & Mozzarella Pasta
Ingredients for 2 portio

High protein, minimal ingredients and perfect with grilled chicken on top 💪✨ (you can add whatever protein source you like! It would also work well with tofu, salmon, bacon)
120g pasta
2 garlic cloves, minced
Handful of cherry tomatoes, halved
1 tbsp tomato purée
100ml water (slowly add - you can add more/less)
120ml low-fat cream
20g grated parmesan
Fresh parsley, chopped
30g Light mozzarella, torn
200g cooked chicken breast or any protein
Instructions
Boil pasta until al dente.
In a pan, sauté garlic & cherry tomatoes until soft.
Add tomato purée, water & low-fat cream—stir into a sauce. You may need to add more water to loosen up the sauce.
Mix in parmesan, parsley & drained pasta.
Top with mozzarella & your protein—I used grilled chicken!
