Whole Grain Tramezzini with Smoked Salmon

Ingrédients

1 small handful watercress sprigs, coarse stems removed

1 tablespoon extra-virgin olive oil

1 teaspoon lemon juice

Sait and freshly ground black pepper

4 thin slices whole grain bread (pane integrale)

Extra-virgin olive oil

Fresh lemon juice

3 ounces thinly sliced smoked salmon, without coloring or preservatives

Slightly less than ¼ seedless cucumber, peeled and thinly sliced

Instructions

Toss the watereress with the 1 tablespoon olive oil and 1 teaspoon lemon juice. Season with salt and pepper to taste. Trim the crusts from the bread. This is optional but makes the tramezzmi look more "finished."

Drizzle 2 of the bread slices very lightly with more olive oil and lemon juice. Arrange the smoked salmon on top. Cover with cucumber slices. Season lightly with salt and pepper. Top with the watercress salad and cover with the other slices of bread.

Makes 2 tramezzini.
