Chocolate Doughnuts

Chocolate Custard-Filled Doughnuts
Ingredients:
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 1/4 teaspoons active dry yeast
1/2 teaspoon salt
1/2 cup whole milk
2 tablespoons unsalted butter
2 large eggs
Vegetable oil, for frying
1 cup heavy cream
4 ounces semisweet chocolate, chopped
1 teaspoon vanilla extract
Powdered sugar, for dusting
Directions:
In a large bowl, combine 1 cup of flour, sugar, yeast, and salt.
In a small saucepan, heat milk and butter until warm (110°F/43°C); butter does not need to melt completely.
Add warm milk mixture to dry ingredients; beat until smooth.
Add eggs; beat until combined.
Gradually add remaining flour to form a soft dough.
Knead dough on a floured surface until smooth and elastic, about 5-7 minutes.
Place dough in a greased bowl; cover and let rise until doubled, about 1 hour.
For the custard, heat heavy cream in a saucepan until it begins to simmer.
Remove from heat; add chopped chocolate and vanilla extract, stirring until smooth. Let cool and refrigerate until thickened.
Punch down dough; roll out to 1/2-inch thickness.
Cut out doughnuts using a 3-inch round cutter; place on a floured surface, cover, and let rise until doubled, about 30 minutes.
Heat oil in a deep fryer or large pot to 350°F (175°C).
Fry doughnuts, a few at a time, until golden brown, about 1-2 minutes per side. Drain on paper towels.
Once cool, use a pastry bag to fill each doughnut with chocolate custard.
Dust with powdered sugar before serving.
