This is the chicken pot pie I put on my stories last week, it’s so damn delish! I’ve tweaked the original recipe to be gluten & dairy free!

You need:

1 rotisserie chicken (shredded)

2 tbsp butter (dairy free)

2 large carrots

2 large celery sticks

1/2 cup of frozen peas

1 leek (not a brown onion)

1 ½ cups of chicken broth

3/4 cup of almond milk

4 tbsp gf flour

1 tbsp minced garlic

thyme

1 tsp salt

1 tsp pepper

1 tsp paprika

1 tsp yellow mustard

Gf puff pastry

1 egg

Instructions

Preheat oven to 200’

Melt butter

Add leek, celery + carrot

Cook for 7-8 mins

Add garlic + thyme (stir)

Add flour (sauté to 1 min)

slowly add broth and stir

Add milk

Add spices

Add Chicken

Add frozen peas

Cut puff pastry in squares

Place ontop

Brush with egg wash

Bake for 25 mins or till golden brown
