Pumpkin Spice Spaghetti

Ingrédients

2 tbsp olive oil

1 tbsp minced garlic

1 shallot, finely diced

4 sage leaves, chopped

1 tsp thyme fresh or dried

1 tsp pumpkin spice

2 tsp salt

1/2 tsp pepper

1 can pumpkin puree

1/3 cup coconut cream

3/4 cup pasta water

Instructions

Boil water for pasta in large pot and add in 8 oz spaghetti. I used bucatini!

In a large pan on medium heat, saute garlic and shallot in olive oil until fragrant and translucent.

Add the sage, thyme and pumpkin spice, saute for another few minutes.

Add salt pepper, pumpkin purse and coconut cream. Mix well! Stir and simmer for 5 more minutes.

Add the pasta to the sauce and add saved pasta water.

Mix well with tongs and plate! Add vegan Parmesan cheese and more sage on top, enjoy besties!!
