Chili Halloumi Sausage Pasta

85g dry weight spaghetti
30g halloumi (I highly recommend the chilli halloumi from Aldi)
2 lean sausages, skin removed and chopped
One small white onion, diced
2 tsp lazy garlic or 2 garlic cloves, diced
1 chicken stock cube + 50ml water
2 spoonfuls pasta water
40g reduced fat soft cheese
2 tsp chilli flakes
1 tsp paprika, oregano, basil
Instructions
In a pan, add a tsp of oil and add in the garlic, followed by the halloumi to fry off on either side until browned. When cooked, leave to one side, then add in the diced onion and fry off until fragrant, then add in the sausage.
Season with the salt, pepper, paprika, oregano, basil and chilli flakes and fry until the sausage is browned, then add in a tsp of tomato puree.
When the sausage is browned, add in the chicken stock and water along with the soft cheese, leaving on a low to medium simmer for the sauce to thicken up. Add some more chilli flakes here too if you fancy more of a kick!
Finish by serving with a sprinkle of dried parsley.
