1.5kg stewing beef
Salt and freshly ground black pepper
2 Tbsp vegetable oil
250ml beef stock
3 bay leaves
3 - 4 chipotle chilies in adobo
6 garlic cloves
1 1/2 Tbsp cumin
1 Tbsp oregano
1/4 tsp ground cloves
50ml fresh lime juice
Instructions
Brown meat in a pan in veg oil
Add stock and bay leaves to slow cooker on low
Blend remaining ingredients with enough water to loosen in to a spreadable paste
Coat meat in blended sauce and add to stock
Cook on low for 12 hours minimum, but you can leave it in for up to 24
When finished cooking remove meat and strain sauce to remove grit
Pull meat and return to sauce and stir to coat
