Barbacoa Beef

Ingrédients

1.5kg stewing beef

Salt and freshly ground black pepper

2 Tbsp vegetable oil

250ml beef stock

3 bay leaves

3 - 4 chipotle chilies in adobo

6 garlic cloves

1 1/2 Tbsp cumin

1 Tbsp oregano

1/4 tsp ground cloves

50ml fresh lime juice

Instructions

  • Brown meat in a pan in veg oil

  • Add stock and bay leaves to slow cooker on low

  • Blend remaining ingredients with enough water to loosen in to a spreadable paste

  • Coat meat in blended sauce and add to stock

  • Cook on low for 8-9 hours

  • When finished cooking remove meat and strain sauce to remove grit

  • Pull meat and return to sauce and stir to coat
