Ingrédients

3-4 whole bulbs of garlic, cloves removed

3-4 springs of thyme or rosemary

Enough oil to cover all the garlic

Instructions

Transfer all into a tray and roast at 160C for 40-45 minutes

Remove the roasted garlic cloves, and when at room temperature, blend with 1 stick of softened butter(115g)

Store the roasted garlic butter in the fridge or freezer

When ready to use, Place 2-3 large spoonfuls of the garlic butter into a saucepan, add in 1 tablespoon of water and slowly melt the butter, gently mixing so that it becomes a sauce.

If the butter splits, add in an egg yolk and whisk in on low heat. Transfer your boiled Penne pasta into the sauce, season with salt and pepper.
