Ingrédients

Marinade

200g White skin onions

500g Buttermilk

300g Water

12g Salt and pepper seasoning

10g Salt

10g Msg

1.5g Cayenne

5g Tabasco

Dredges

Plain flour

Panko breadcrumbs

Instructions

Combine all marinade ingredients, mix well.

Cut white onions into ½” thick rings, separate and drop into marinade. Refrigerate for 8 hours or overnight, to soften.

Working in batches, shake off excess marinade from rings, then toss in flour. Shake to remove extra flour.

Return onion rings to marinade again, shake off excess, then toss in panko.

If desired, can freeze at this point.

Fry at 170°C for 2-3 minutes.
