Ingrédients

Toss 1 1/2 lbs cubed chicken breast with 2 tbsp paprika, 1 tbsp salt, 1/2 tbsp black pepper, 1 tbsp parsley.

Instructions

Heat large skillet on medium high heat and add coconut or avocado oil to pan. Cook chicken for 5ish min and toss to brown each piece.

Add 1 cup chopped cherry tomatoes, 3 cups chicken broth and 1 cup white or brown rice. Bring to simmer, cover and cook on medium heat for 10 min.

Add 8 oz coconut milk and 2-3 handfuls of baby spinach or kale. Simmer 10 more min uncovered.
