Ingrédients

500ml milk 500ml double cream 75g sugar Zest of 1 lemon tsp vanilla extract 130g rice To serve: Jam, fruit compete or cooked fruit

Instructions

1 Combine the milk, cream, sugar and lemon zest in a saucepan and bring to a boil. Reduce the heat and simmer for 10 minutes. Stir in the vanilla extract.

2 Add the rice and cook for 30-40 minutes until the rice is tender and creamy, stirring often.

3 Divide the pudding into serving glasses or bowls. Top with jam, fruit compote or cooked fruit before serving.
