Baked Lemon Fettuccine with Asparagus and Feta

Ingrédients

250g fettuccine

1 bunch of asparagus

150g feta cheese

1 lemon, cut in half

3–4 garlic cloves, halved

2 cups hot water

Salt and pepper to taste

Olive oil (optional, for drizzling)

Fresh herbs (like basil or parsley) for garnish (optional)

Instructions

Preheat the oven to 200°C (390°F).

Place the fettuccine in a deep baking dish.

Add asparagus pieces, feta, lemon halves (cut side up), and garlic cloves.

Pour water over the ingredients until the pasta is just covered.

Season with a bit of salt and pepper. Drizzle with olive oil if desired.

Bake for 25–30 minutes, or until the pasta is tender.

Remove from the oven. Using tongs, squeeze the juice from the roasted lemon halves into the dish.

Stir everything together gently until well mixed and creamy.

Garnish with fresh herbs and serve warm.😋🫶🏼
