Creamy Elotes Dressing (use 1/3 in salad):

170g plain non-fat Greek yogurt (FAGE)

113g 2% cottage cheese (Good Culture)

40g sriracha

30g honey

5g low sodium soy sauce

Juice & zest from ½ lime

½ tsp sea salt

¼ tsp black pepper, garlic powder & smoked paprika

Salad Ingredients:

300g romaine

300g lettuce

½ bag frozen corn (8oz)

20oz chicken breast (raw weight) — seasoned with Cajun spice

100g red onion

200g grape tomatoes

40g jalapeño

15g cilantro

15g minced garlic

20g parmesan or cotija cheese

1 ½ tsp sea salt

1 tsp black pepper, garlic powder & smoked paprika

Instructions

Blend dressing ingredients until smooth and refrigerate.

Pan-sear corn until golden, then let cool.

Air fry or grill chicken at 400°F for ~10 mins.

Combine everything in a large bowl — use ⅓ of the dressing. Keep dressing on the side if prepping ahead!
