Shaved Tofu Gyros

Ingrédients

Shaved Tofu Gyros👇🏼😍 Hits the spot every time. Fluffy pita filled with pan fried shaved tofu, creamy tzatziki, lettuce, tomato and onion 🥙 So quick and so yum!

Tzatziki:

1 cup coconut yogurt

1 small cucumber, grated and juice squeezed out

Pinch of salt and pepper

Juice from 1 lemon (2-3 tbsp)

1 garlic clove minced

1 tbsp chopped fresh or dried dill

1 tbsp chopped mint

1/2 tbsp olive oil

Tofu:

300g firm tofu

Oil for pan frying

3 garlic cloves minced

1 tsp oregano

1/2 tsp smoked paprika

Pinch of salt

Other:

2 large pita breads

2 handfuls chopped lettuce

1 large tomato, diced

1/2 red onion, sliced thin

Press the tofu with paper towel to remove any excess water. Using a peeler, peel the tofu to create thin strips.

Instructions

Heat a frypan over high heat and add some oil. Add the tofu and cook until lightly golden, tossing occasionally. Then add the garlic, oregano and paprika, toss and cook for a few minutes.

Combine the tzatziki ingredients together in a bowl.

Heat the pita in the microwave or pan to soften. Add the tzatziki, lettuce, tofu, tomato and onion. Fold up and enjoy.

You could also air fry or bake the tofu instead, just toss the tofu in some olive oil along with the garlic and oregano, bake until golden at 200C
