Sweet Cranberry and Spinach Salad

Ingrédients

Romaine Lettuce

Baby spinach leaves

1 cup dried cranberries

Sliced almonds

1 can of drained mandarin oranges

1 to 1.5 cups sugared sliced almonds (see instructions below)

8 oz. cooked bacon, broken up

Instructions

Toss all ingredients together and top with good poppy seed dressing. You can also sprinkle shredded mozzarella or monterey jack cheese over the top.

Notes

Sugared Sliced Almonds:

Place 1 to 1.5 cups sliced almonds in nonstick fry pan. Add 2 to 3 Tbsp. Sugars. Stir and cook over low to medium heat until starts to crisp and sugar starts to melt. Nuts will turn a golden brown color. Be sure to stir constantly—for the first few minutes very little will happen but very quickly the nuts will brown and can then burn easily. You have to really watch them and keep stirring. Pour out onto a plate and let them cool and harden.
