Mac And Cheese

150g macaroni (one full cup)
1 T oil
75g bacon, chopped
1 c milk
2 T thickened cream
25g butter
2 T plain flour
1 t American mustard
¾ c tasty cheese, shredded
Instructions
Cook pasta in a saucepan of salted water following packet directions until just tender (approx 8 mins).
Drain.
Meanwhile, heat oil in a frying pan.
Add bacon and onion.
Set aside when cooked.
Combine milk and cream in a jug.
Melt butter in a saucepan over medium heat and add in flour.
Cook, stirring, for 1 or 2 minutes.
Remove from heat and gradually stir in milk mixture.
Bring to the boil.
Reduce heat to medium.
Cook, stirring, for 5 minutes or until mixture thickens.
Stir in mustard and cheese.
Season with salt and pepper.
Cook for 2 minutes or until combined and cheese is melted.
Add sauce and bacon to pasta.
Serve.
