Boursin Spinach & Sun-dried Tomato Orzo Bake

Ingrédients

2 cups uncooked orzo

4 garlic cloves, finely chopped

1 cup sun-dried tomatoes, roughly chopped

2 tbsp sun-dried tomato oil (from the jar)

1 wheel Boursin cheese (150 g)

4 cups vegetable stock

2 cups spinach, roughly chopped

1 ½ cups smoked white cheddar, shredded

1/2 tsp dried basil

1/2 tsp dried oregano

1/4 tsp salt

1/4 tsp pepper

Instructions

Preheat oven to 375°F (190°C).

In a large oven-safe skillet or baking dish, combine orzo, garlic, sun-dried tomatoes, sun-dried tomato oil, vegetable stock, dried basil, oregano, salt, and pepper.

Nestle the Boursin cheese into the center, cover tightly with foil, and bake for 25 minutes until the orzo is tender.

Remove foil, stir in spinach and smoked white cheddar, then bake uncovered for another 5–10 minutes until melted and creamy.

Serve warm straight from the pan!
