Ingrédients

For the Meatballs:

•1 lb ground beef

•1/4 cup uncooked white rice

•1 egg

•1/4 cup finely chopped onion

•2 garlic cloves, minced

•2 tbsp chopped fresh cilantro

•1 tsp garlic powder

•salt and pepper

•italian seasoning

For the Soup:

•1 tbsp olive oil

•the rest of your onion, finely diced

•2 garlic cloves, minced

• celery and carrots, finely diced

•4 cups chicken broth

•2 cups water

•1 can of spicy v8

•2 medium potatoes, peeled and diced

•salt and pepper

•italian seasoning

•garlic powder

•Fresh cilantro for garnish (optional)

•lemon juice for topping

Instructions

Blend up an onion, a small tomato, cilantro and garlic. add it to a bowl with beef, rice, salt, garlic powder, pepper, egg and italian seasoning.

Saute onion, garlic, celery and carrots.

Add the chicken broth, water, rest of seasonings, potatoes and v8.

Bring to a boil and add in meatballs.

simmer for 25-30 minutes

top with cilantro and lemon juice
