21 oz 93/7 lean ground beef
1 packet taco seasoning (or your preferred amount)
900g sweet potatoes, peeled, cubed, and cooked (boiled and air-fried)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp paprika
200g egg whites
20g reduced-fat cheddar cheese
120g fat-free cottage cheese
2 tbsp honey
Hot sauce (to taste)
Instructions
Prepare Sweet Potatoes:
Peel and cube the sweet potatoes.
Boil the sweet potato cubes in salted water for about 10 minutes or until soft.
Drain and transfer to an air fryer basket. Air fry at 375°F for 15-20 minutes, shaking halfway through, until crispy.
Cook the Ground Beef:
In a large skillet, cook the 93/7 lean ground beef over medium heat.
Add the taco seasoning (follow packet instructions for water or use a dry mix if desired).
Stir and cook until the beef is fully browned and seasoned.
Make the Egg Muffins:
Preheat your oven to 350°F (175°C).
Spray a muffin tin with non-stick cooking spray or use muffin liners.
Pour the egg whites (200g) evenly into the muffin cups.
Bake for 12-15 minutes, or until the egg whites are fully cooked and firm.
Once cooked, top each egg muffin with a spoonful of fat-free cottage cheese (about 1 tablespoon per muffin) and a small sprinkle of reduced-fat cheddar cheese (about 5g per muffin).
Return to the oven for another 2-3 minutes to melt the cheese.
Make the Hot Honey Sauce:
In a small bowl, mix 2 tbsp honey with hot sauce to taste. Adjust the amount of hot sauce based on your desired heat level.
Assemble the Taco Bowls:
In each serving bowl, layer the crispy sweet potatoes as the base.
Add a portion of the seasoned ground beef.
Place 1 or 2 egg muffins on top of the beef (depending on your preference).
Drizzle the hot honey sauce over the entire bowl.
Garnish with salt, pepper, garlic powder, and paprika to taste.

Serve immediately while the egg muffins are warm and the sweet potatoes are crispy.
