Grilled Shrimp and Avocado Salad

Ingrédients

For the Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper, to taste

For the Salad:

4 cups arugula or mixed greens

1 ripe avocado, diced

1 cup pineapple chunks (fresh or grilled)

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

For the Dressing:

3 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon honey

1/2 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions

In a bowl, toss shrimp with olive oil, garlic, paprika, cumin, salt, and pepper.

Grill shrimp over medium heat for about 2–3 minutes per side until pink and cooked through.

In a large salad bowl, combine greens, avocado, pineapple, tomatoes, and red onion.

In a small bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper.

Add grilled shrimp to the salad.

Drizzle dressing over the salad and gently toss to combine.

Serve immediately and enjoy!
