This weekend’s sweet treat are these high protein cookies, made with 2 simple ingredients and no added sugar! They turn out slightly crispy on the outside with a gooey center, come together in about 10 minutes and are just perfect for a healthier sweet treat! Enjoy right away for best results!

Here’s what you need:

1 small ripe banana

1/2 cup natural peanut butter

1/2 cup vanilla protein powder

Optional: chocolate chips and sea salt to top

Instructions

Preheat oven to 350F. Mash the banana then fold in the peanut butter and protein powder. Let it sit for a minute or two and mix again as the protein will start to slightly thicken the dough. Scoop 6 cookies onto a parchment lined baking sheet. Dough will be sticky! Form circles as best as you can. Then top with chocolate chips if desired.

Press down lightly with a fork to form discs. Bake for 10-12 minutes until edges are golden and center is no longer wet.

Remove, top with sea salt and let cool for 5 minutes before transferring to a cooling rack. Enjoy immediately for best results, as they tend to soften after being stored.

with only 2 ingredients, quality matters! Important to use runny natural peanut butter for the right texture, and l use a beef isolate protein powder, I have not tested with other protein powders
