Ingredients for 8 slices:
200g almond flour (2 cups)
60ml extra virgin oil (or olive oil) (1/4 cup)
60ml lemon juice (from 2 lemons) (1/4 cup)
2 eggs
60g honey (~3tbsp)
1 tbsp lemon zest
1/2 tsp baking powder
1/2 tsp baking soda
Instructions
In a bowl add all the ingredients and mix.
Pour the batter into a baking tin with parchment paper (15cm / 6inches baking tin).
Bake at 180C (356F) static oven for 25 minutes (last 5 minutes covered with foil to prevent the top to burn).
