Zucchini-cheese Frittata

Ingrédients

2 fresh zucchini, sliced

4 spring onions, sliced (including the green part)

4 tablespoons of olive oil

1/4 teaspoon of Maldon salt or flaky sea salt

1/2 teaspoon of ground black pepper

Egg mixture ingredients:

10 eggs

1/2 teaspoon of salt

1/2 teaspoon of ground black pepper

1 teaspoon of garlic powder

1 cup of feta cheese, crumbled

1/2 cup of shredded mozzarella cheese

Instructions

Preheat your oven to 420F (215C).

In an oven-safe skillet, heat olive oil over medium heat. Add sliced zucchini, spring onions, flaky salt, and black pepper.

Sauté for 3–4 minutes, until the vegetables are tender.

In a bowl, whisk together eggs, salt, pepper, garlic powder, and crumbled feta.

Pour the egg mixture into the skillet over the vegetables. Sprinkle shredded mozzarella on top.

Let it cook on the stove for 1 minute, then transfer the skillet to the preheated oven.

Bake for 5–7 minutes, or until the top is golden and set.

Serve with: Israeli chopped salad and cottage cheese.
