Eggplant finds its way into so many dishes across Southern Italy, and these Polpette di Melanzane are one of my favorites. Crispy on the outside, soft in the center, and served over a simple tomato sauce with ricotta salata. If you're looking for an easy eggplant recipe, this one is always a winner.
Ingredients:
1 lb eggplant, cubed
2.5 oz bread, soaked in milk (strained)
1 cup grated Parmigiano Reggiano
1 egg
1/4 cup tomato polpa
3/4 cup breadcrumbs, plus more for coating
Fresh basil
Salt and pepper
Olive oil
Ricotta salata
Directions:
1. Fry the eggplant in olive oil until golden or bake until softened.
2. Add to a large bowl along with the soaked bread strained, Parmigiano, egg, tomato polpa, breadcrumbs, basil, salt, and pepper. Mix until combined.
3. Form into meatballs, coat lightly in breadcrumbs, and fry in olive oil until golden and crispy on all sides.
4. Serve the eggplant meatballs over the tomato sauce and finish with fresh basil and grated ricotta salata.
